Texas chef icons Todd David, Kent Rathbun, and Tim Byres go whole hog at this special food celebration.
Chefs will display their signature take on whole-hog barbecue on Sunday, October 22, 2017. The event takes place at the new home of Four Corners Brewing Co. located at 1311 South Ervay St. — The Cedars neighborhood.
This is the fifth annual “Dia de los Puercos” celebration and part of the brewery’s 5th-year anniversary. “We’re incredibly fortunate and grateful to have this level of chef talent here to celebrate our business’ anniversary and the grand opening of our new property. The chefs inspire us as brewers and business owners. They make difficult things look simple and do simple things extremely well,” said Co-Owner, George Esquivel.
The pork-centric event is expected to be the biggest “Dia de los Puercos” celebration the brewery has ever hosted. In past years, the brewery has hosted celebrated chef Kent Rathbun, Carolina barbecue legend Sam Jones and a variety of DFW’s top taqueros. The day will be filled with music, games, whole-hog barbecue and FCBC beer, of course. Ticketed guests will receive hearty samples from each chef along with a variety of beers to pair with the food and festivities.
“Dia de los Puercos was inspired by a home-cooking event we’ve held among friends for over a decade. We call that one ‘Pork-a-Thon’. We hope to give everyone the same back-yard feel just on a much bigger scale. Bring a lawn chair, family and friends,” said Esquivel.
All three chefs participating in this year’s cultural celebration have a distinguished background in the Dallas food-scene.
Rathbun is a four-time James Award nominee and has received the Forbes Four-Star award and the AAA Four Diamonds award. Bon Appetit named Rathbun as having some of the top ribs in America. His current restaurants include Shinsei and Lover’s Seafood.
David is the owner and head pitmaster of DFW’sCattleack Barbeque. In 2017 Cattleack Barbecue earned a coveted No. 3 spot in Texas Monthly’s Top 50 barbecue joints in Texas and has been featured on Food Network. Those who know Texas barbecue know Cattleack Barbeque.
Byres is co-owner and Chef of Dallas’ acclaimed restaurant, SMOKE, as well as Chicken Scratch Restaurant, The Foundry Bar, and Bar Belmont. Since 2009, Byres has pulled from his experiences of growing up in California, the traditions of the old-world kitchens in Belgium and his tour of the Deep South to reinvent firewood cooking and the Dallas dining scene. Byres is the author of the James Beard Award winning cook book, “Smoke: New Firewood Cooking.” Byres continues his search to deliver honest, genuine food bringing together an intelligent mix of flavors; sophisticated yet balanced with the familiar.
