I am a huge fan of cupcakes. I have them often from several Dallas and Collin County bakeries.
Recently I began hearing a lot about a food truck named Trailercakes. I thought to myself “Trailercakes? Hmmm, I wonder if the cupcakes are as good as the name.” So I went to their website to gather more information.
The Trailercakes website boasts a goal to always serve the best tasting cupcakes you’ve ever had, while evoking nostalgic emotions of happiness and bliss. Pretty lofty goal I’d say.
Last week I finally made a stop at their commercial kitchen in the basement of 740 East Campbell in Richardson. I went with the notion that these are going to be “good” cupcakes, like the rest…not “great” cupcakes. As I stepped off the elevator, the smell of fresh-baked goodies made my mouth begin to water and my mind begin the change.
I was greeted by the fabulous Ricardo and he informed me about the selection of cupcakes, their cute names and why I should call ahead early to avoid being sadden by a sellout.
With so many choices, it was hard to make a decision but I purchased 4 mini cupcakes: Strawberry Fields, Hitched, PB&J and their newest creation Cookie Monster. Let’s take them one by one.
Strawberry Fields-white cake with strawberry frosting topped with a piece of strawberry Pop Tart (I think there were bits of white chocolate in the cake…unsure)
This frosting of this cupcake has bits of strawberry in it! YUM! I like this one very much.
Hitched-white cake with white frosting
This cupcake is a basic cupcake and is a very good choice if you like something with a little less frill. I like this one as well.
PB&J-white cake with a strawberry jelly center with peanut butter fluff frosting topped with a Nutter Butter
I originally visited the bakery for this particular flavor. I love peanut butter! This cupcake tastes just like a PB&J sandwich…my favorite late night snack. You must try this!
Cookie Monster-white cake, cookie crumb bottom with a cookies and cream frosting topped with a Oreo
This cupcake tastes just like my favorite cookies & cream ice cream. I didn’t think I would like it much and that the PB&J flavor would be my top choice but I must say Cookie Monster was a delight and clearly my top choice of the 4 mini cupcakes purchased.
I will still enjoy cakes from other bakeries but Trailercakes are one of the best cupcakes I’ve ever eaten that did not come from my own kitchen. I love how pure the flavors are and how fresh the cakes taste.
I can not wait to go back and try more flavors. What I plan to try next…The Tourist. It has Nutella Buttercream frosting!
I usually stay away from chocolate cupcakes because I don’t care for chocolate cake but Trailercakes are so good that I am willing to try the Slap-Your-Mother Chocolate…
Looks yummy!
I’m not a big cupcake eater because I don’t particularly like icing, but these cupcakes are so cute. How could I not try one?

Yeah, sometimes the icing can be too much. I guess that’s why I like the minis – little shots of cupcake!
